To prepare this appetizer, you need an onion, two potatoes, a green pepper, a teaspoon of butter, a can of creamed corn, ¼ teaspoon salt, ¼ teaspoon pepper, ¼ teaspoon paprika and ½ cup milk. Place a soup pot over a medium fire.
Put the butter in the pot and melt. Chop the onion and green pepper. Peel and slice potatoes. Add the green pepper, onions, and salt in the pot. Saute for two minutes. Add the sliced potatoes and cover the pot.
Change the heat setting to low. Wait until the potatoes soften. Pour the milk and add the creamed corn. Stir the mixture until it becomes thick.
Season with paprika and cover the pot. Remove from heat. Let it stand for three minutes. Serve immediately.
Beef Barley Soup
The ingredients for this appetizer are a tablespoon of olive oil, a large carrot, a large celery stalk, a medium onion, ¼ teaspoon salt, ¼ teaspoon pepper, three cups chopped and cooked beef as well as eight cups beef broth.
In addition to these ingredients, you need ¼ teaspoon oregano, ¼ teaspoon basil, ¼ teaspoon garlic powder, a large can of diced tomatoes, and a cup of dried pearl barley.
Pour the olive oil into a small pot and place over medium fire. Add the butter and melt. Chop the carrot, celery stalk and onion. Add the celery stalk, carrot, and onion to the pot. Stir in the salt.
Cover the pot and wait for the vegetables to soften. Add the beef, pepper, broth, oregano, basil, diced tomatoes, pearl barley, and garlic powder. Boil the mixture.
Change the heat setting to low and cook for an hour. Get a fork and check if the pearl barley softens. As soon as you see the barley expands, remove the pot from heat.
Serve immediately. If you will not serve the soup right after cooking, transfer it to a clean container to avoid food contamination. Make sure that you serve the appetizer within two days. Do not forget to heat before serving.
